Ilkley-based Lishman’s Butchers & Charcutiers has added more Great Taste accolades to its ever-growing stable of award-winning charcuterie products, picking up a coveted 2 Stars for ‘Yorkshire Nduja’ and 1 Star for its Air Dried York Ham.
Organised by the Guild of Fine Food, for over three decades Great Taste has been recognised as the world’s most influential food and drink accreditation scheme, this year attracting a record number of entries, with 14,340 products from 110 countries placed before a judging panel of over 500 industry experts.
Both star ratings are highly respected seals of approval, much sought-after commendations ranking award-winning products ‘above and beyond delicious’.
The shop’s Yorkshire Nduja salami was one of just 1,508 products globally to receive 2 Stars. Pronounced ‘en-doo-ya,’ it is an all-time favourite of owner David Lishman, originally hailing from Calabria in southern Italy.
Great Taste judged commented:
“It certainly delivers classic salami flavours, in spreadable form. We applaud the simple, short list of ingredients. It is balanced and the herbal notes add interest, a well created and enjoyable product."
Said to be one of its most versatile products, adjudicators also praised Lishman’s Air Dried York Ham for its “pleasing texture, well-cured with a balanced seasoning and notes of the spices coming through on the palate - ultimately a great tasting ham."
Over the years, David Lishman has travelled far and wide across Europe, first sourcing, then sampling products that might be adapted, hand-crafted in-house using local meats and added to the shop’s fast-expanding charcuterie arm, established in 2010, with a standalone drying and maturation unit launched in nearby Skipton three years ago.
The division, which continues to be managed by Skipton man and business partner Andrew Waterhouse, is already a Champion Charcuterie Producer in the British Charcuterie Live Awards, with a host of past Great Taste awards also in the bag.

said David, who manages the business with daughter Emma, national vice-chairman of the industry-leading Butchers Q Guild.
As well as being readily available in the Leeds Road shop and by mail order, Lishman’s award-winning charcuterie products are also supplied to delicatessens, farm shops and high-class restaurants nationwide.
